About Cenci Trento Brut Nature

They say every teacher has their own book, and in Trentino-Alto Adige, this is evident. Amidst mountains and limestone soils, sparkling wines are crafted using the Metodo Classico Trentino (or Trentodoc Metodo Classico). Yes, it's the same traditional method the French call champenoise, but adapted to the climate, terrain, and style of this northern Italian region.

And if anyone knows what it means to make it their own, it's Valentino and Silvia, the couple who decided to completely transform their lives to dedicate themselves to the vineyard. Their chardonnay, planted by Valentino's father in 2007, thrives in limestone soils, and each cluster is harvested by hand, only when it reaches its perfect point. Nothing is left to chance: it is selected, carefully pressed, and fermented under control to maintain freshness and character.

Then comes the second fermentation in the bottle, with 30 months of ageing on the lees, which imparts creaminess, fine bubbles, and aromas of apple, toasted bread, and minerality. Finally, it is disgorged and ready. A sparkling wine that combines freshness, precision, and the dedication of an entire team behind it.
