Sweet wines are wines with a higher percentage of sugar. During the winemaking process, sugar is converted to alcohol during the fermentation process, therefore to produce sweet wines a higher concentration of sugar is needed, sugar that comes from the over maturation of the grapes, using either grapes that already have a higher concentration of sugar, or through the drying of the grapes in the sun. The most famous sweet wines from Spain are possibly those sweet wines from Jerez, although high quality sweet wines are also produced in other regions such as Sierra de Málaga, Priorat, Empordà. The grape varieties most widely used for the production of sweet wines are Pedro Ximénez, a sweet variety from D.O. Jerez, Moscatel and Garnacha.
