About Château du Retout

To achieve the perfect balance between terroir, coupage and aging. This has always been the main objective of all Bordeaux producers. In this process, which is fundamental to achieve the excellence of its wines, intuition is essential. Knowing how to sense the perfect, ideal moment is a skill that very few master. And one who manages this gift to perfection is the Château du Retout.

As the harvest approaches, sensory analysis is the main tool used to determine the optimal time to harvest the grapes at Château du Retout. To do so, tastings are periodically carried out to analyse the condition of the 34 hectares of red varieties that are part of the property. Today, the Kopp family, which in 1950 merged Château Retou-Rosset, Château Salva de Camino and Château Moulina, is still at the helm of the company. The vineyards of Château du Retout are located on the top of a hill, on clay-gravel soils. In this place, where there is also a 13th century mill, old vineyards (planted at the end of the 1950s) are mixed with more recent varieties such as cabernet sauvignon, merlot and petit verdot. In this field, observation and trial and error are the principles that govern the care of the vineyard, where environmentally-friendly practices and work are sought at all times, with as little intervention as possible.

At harvest time, Château du Retout is harvested mechanically with state-of-the-art machinery, which guarantees a totally respectful harvest in which the berries are sorted from the beginning. Usually, in other companies, this selection process is carried out by hand, but in the case of Château du Retout, you have to wait until you enter the winery to find the human factor. After manual selection on the table, Château du Retout is aged in stainless steel tanks, where it undergoes one week of pre-fermentation maceration. After this phase, during which the grape pulp will be lowered to 5°C, Château du Retout will be reheated to start fermentation. This new phase, in which each variety is worked separately, will last another seven days. During this time, the pumping over is carried out by gravity, achieving a good extraction of the phenolic compounds responsible for giving colour and aroma to the wine. As if that were not enough, a week later, just after fermentation, Château du Retout will be macerated again before devatting and pressing.

After assemblage, Château du Retout will need about 12 months of barrel aging to reach its perfect balance. These barrels are carefully selected each year from nine different cooperages. Every year, one third of the barrels are renewed. And finally the bottling: bottle filling, corking (always of the best quality), labelling... et voilà! Everything is now ready for the senses to enjoy Château du Retout.
