If there is a winery where attention to detail is paramount, it is Perelada. Every nuance, every peculiarity, is mirrored in their wines, with bottles that become true tributes. One such wine is Perelada Cigonyes Tinto, with which this winery in the DO Empordà demonstrates its commitment to the reintroduction of storks in Girona.
It appears that, for years, the Aiguamolls de l'Empordà Natural Park has been working to encourage the proliferation of this species in the region, where historically storks were scarce. Perelada contributes its part with the gardens of the Castillo de Perelada, where in 1998 a pair of these birds nested for the first time. Several decades later, this number has increased to 30 pairs and 50 chicks, thus ensuring the perpetuation of the species.
To celebrate this success, Perelada crafts Perelada Cigonyes Tinto, a blend of garnacha and syrah that thrives at an altitude of 600 metres above sea level on granite and slate soils. Perelada Cigonyes Tinto is harvested, destemmed, and crushed, with the resulting must transferred to a tank for maceration. Subsequently, Perelada Cigonyes Tinto moves to stainless steel tanks where fermentation occurs. Finally, Perelada Cigonyes Tinto is racked and transferred to French oak barrels for a brief ageing period of several months.
