About Corregüela
Love at first sight, or the so-called "crush", is more common than we think. It occurs when two people connect instantly, without exchanging a single word, driven by an inexplicable and immediate attraction. This is exactly what Silvia Rocher felt in 2012 when she stumbled almost by chance upon a small vineyard of rufete in the Sierra de Francia. It was a true coup de foudre. Seven years after that initial impact, Silvia decided to take the definitive leap with her friend Manuel García to produce their own wines. This is how Malahierba was born, a deeply Salamanca-rooted project that shuns trends to highlight the native heritage, organic viticulture, and minimal intervention in the winery, proving that when intuition leads, the best stories end up on the table.
From the mountainous surroundings of Salamanca, Corregüela is born under the auspices of the Denominación de Origen Protegida Sierra de Salamanca. The old vines of the minor grape variety rufete are spread across small plots on terraced slopes at an altitude of around 700 metres above sea level. The soils are granitic with the presence of slate, a combination very poor in organic matter that forces the roots to delve deep in search of moisture, imparting the wine with a pronounced mineral tension and natural freshness. The area's climate is Mediterranean mountain, characterised by cold winters, warm summers tempered by the night breezes from the mountains, and generous rainfall that allows for a slow ripening. The cultivation philosophy is strictly organic, respecting native flora and fauna without using synthetic chemicals and carrying out all fieldwork by hand.
The production of Corregüela adheres to an absolute commitment to minimal intervention to let the variety express itself as it truly is. The harvest is conducted manually in small crates to ensure the grapes arrive intact at the winery. Once there, the bunches are destemmed, a technique that involves separating the berries from the stalk or green wood of the cluster, before undergoing spontaneous alcoholic fermentation with indigenous yeasts. The fermentation takes place at controlled temperatures in stainless-steel tanks with very gentle macerations to extract clean fruit and soft tannins without overloading the wine. After completing malolactic fermentation, the biological process that converts malic acid into lactic acid to soften the palate, the wine undergoes ageing in clay jars and barrels for 22 months for subsequent homogenisation.
Corregüela is a subtle, agile, and tremendously expressive red wine, dominated by aromas of wild raspberries, notes of aromatic herbs, and a very fresh mineral background. A vineyard-side crush transformed into an unforgettable and lively sip.
