About Domaine François Carillon Bourgogne Côte d'Or Blanc

Whatever happens, and above all else, François Carillon remains a man of the vineyard. He was before, when he managed the family business with his brother Jacques; and he continues to be now, with his personal project, where the vineyard remains the core around which all 21 wines he currently produces revolve, including Domaine François Carillon Bourgogne Côte d’Or Blanc. 
 
Following his family's tradition —which has been producing wines since the 18th century— François continues to add titles to the long list of marvellous white wines from Burgundy. Once again, Chardonnay shines in this single-varietal cultivated in the A.O.C. Puligny-Montrachet, in three plots of clay-limestone soil where old vines, aged between 33 and 59 years, grow. François Carillon has ensured they are cultivated with care, biodynamically, and in a manner that is entirely respectful of the environment, without using any chemical products. 
 
In the winery, Domaine François Carillon Bourgogne Côte d’Or Blanc follows the strictest Burgundy tradition, with pneumatic press crushings, settling (where the must is left to rest for a few hours before vatting), and fermentations in oak barrels. Here, the work of indigenous yeasts will be crucial, bringing Domaine François Carillon Bourgogne Côte d’Or Blanc to its ideal point for subsequent ageing on its lees in the same barrels where fermentation took place. After this period, the timing of bottling will be determined by the moon, a moment that will be used to finish preparing the wine for sale. 
 
Since 2010, the professional lives of the Carillon brothers have diverged. Now, this new chapter in François's story is marked by high-level wines that have earned him the nickname of king of Chardonnay.
