About Domaine Vacheron Sancerre Blanc Le Paradis

Domaine Vacheron Sancerre Blanc Le Paradis is a monovarietal Sauvignon Blanc white wine from the AOC Sancerre cultivated biodynamically and produced by Domaine Vacheron.

Domaine Vacheron is a winery in Sancerre that has been producing wines there for three generations. At the moment, two brothers from the family, together with two of their children, are in charge of the winery. Domaine Vacheron has 47 hectares, mostly of Sauvignon Blanc, but they also have some plots of Pinot Noir.

The vineyards for Domaine Vacheron Sancerre Blanc Le Paradis are planted in calcareous soils. The harvest is performed manually into 20 kg boxes. Once in the cellar, the entire harvest is gently pressed, the must is cold-racked to remove any impurities, and fermented at a controlled temperature of 20 ºC. Lastly, the wine is aged on lees in 35 hl oak foudres.

2016 Domaine Vacheron Sancerre Blanc Le Paradis 2016 has rich aromas of sharp and ripe fruit. On the palate it is full and has a considerable volume. Its finish is tasty and lingering, magnificently supported by a natural acidity that gives it freshness and elegance.
