About Fasoli Gino Corte del Pozzo Prosecco Frizzante
Prosecco has captivated the taste buds of people worldwide. Its freshness, fruity notes, and versatility have made it an essential element at social gatherings. However, not all Proseccos are created equal. This is where Fasoli Gino stands out, a family-owned winery that, in its fourth generation, has achieved excellence by blending tradition with innovation. An example of their craftsmanship is the Corte del Pozzo Prosecco Frizzante, a sparkling wine whose presentation is a statement of intent. The name "Corte del Pozzo" refers to the well on the estate that supplied the local inhabitants. The label, featuring a goose dressed in a suit, symbolises the connection with farm animals and reflects the wine's evolution towards exceptional refinement and elegance. As a final touch, in the buttonhole of the suit, there is the Phacelia tanacetifolia, a flower that represents biodynamic agriculture and its commitment to sustainable practices.
Made from glera grapes, Fasoli Gino Corte del Pozzo Prosecco Frizzante originates from vineyards situated on a hillside with clay and limestone soils that benefit from the cool breeze. It is organically farmed, and the harvest is done manually at the optimal point of ripeness. The grapes are transported to the winery as swiftly as possible, where they are carefully selected and pressed. The obtained must ferments in steel tanks at a temperature of 15-17°C for 10-12 days. Subsequently, a second fermentation takes place in an autoclave for approximately 60 days, following the Charmat method. Finally, the wine remains on the lees for 10 days with daily stirring.
