About Santa Digna Chardonnay

Saying that someone went to "make their fortune in the Americas" evokes romantic journeys, leather suitcases, and promises of quick wealth. The reality of the land, however, is much cleaner, more straightforward, and demanding. When the Torres family crossed the Atlantic in the late 1970s, they weren't looking for a shortcut to glory, but rather the daily toil of the harvest, the dust stirred up by the wind at dusk, and the challenge of understanding a new soil with the same humility as always. Crossing the ocean meant swapping the familiar landscape of Penedès for the majesty of the Andes, while keeping their hands ready for hard work. In that frontier where Old World knowledge meets the boundless energy of the American land, the conviction was born that a great wine is not dreamed up from an office, but earned at the vineyard, cluster by cluster.

From the Central Valley of Chile, this wine comes from selected plots where Chardonnay vines have found a perfect haven between the mountain range and the Pacific Ocean. The vines are rooted in soils of alluvial and volcanic origin, characterised by a mix of gravel, silt, and sand with extraordinary drainage, forcing the roots to delve deep in search of water. The area's climate is Mediterranean, marked by great luminosity and a pronounced thermal amplitude between the warm days and the cool nights descending from the Andean peaks, allowing for a slow ripening of the grapes that preserves their natural freshness intact. True to the philosophy of the Miguel Torres Chile winery, cultivation is carried out with an absolute ethical commitment to fair trade and respect for biodiversity, caring for the environment and ensuring dignified conditions for the local winegrowing communities.

The production of Santa Digna Chardonnay follows a rigorous process to protect the pure and vibrant expression of the fruit. The grapes are hand-picked at the precise moment of aromatic ripeness. Upon arrival at the winery, the clusters undergo careful destemming, a technique that separates the grapes from the stalk or green stem. After gentle pressing, the must undergoes alcoholic fermentation, the process where yeasts transform sugars into alcohol, in stainless-steel tanks at controlled temperatures. Finally, the wine is clarified and bottled.
