About Vallegarcía Viognier

Vallegarcía Viognier is a white wine from the D.O. V.T. Castilla produced by the winery Pago Vallegarcía.

Vallegarcía Viognier is, as its name suggests, a single-varietal of Viognier. The grapes are sourced from vineyards planted at an altitude of 850m in the Montes de Toledo, within the influence area of the Parque Nacional de Cabañeros.

The winemaking process begins with a pre-fermentation maceration of the must at 8°C. Subsequently, 80% of the fermentation takes place in tanks at 15°C, with the remaining 20% occurring in barrels, where the wine will age on its lees.

Finally, before being released to the market, Vallegarcía Viognier will rest in the bottle for 1 month to further refine.
