About Aljibes Cabernet Franc
Aljibes Cabernet Franc is a red wine made with the Cabernet Franc variety in V.T. Castilla by the Los Aljibes winery.
The winery is at Finca Los Aljibes, in the town of Chinchilla de Montearagón (Albacete). An architectural complex steeped in culture, surrounded by a total of 178 hectares of vineyards at an altitude of almost 1000 meters above sea level, where the combination of tradition and innovation results in great wines.
Limestone soils with little organic matter, altitude and an extreme continental climate favour low production with a long maturation process. The vineyard uses traditional viticulture, combining the most modern techniques with ecological farming methods. When the Aljibes Cabernet Franc grape is about to be harvested, the first cluster is chosen from the same field.
When they reach the winery, the grapes go through selection and once they have been destemmed, they are tested for quality once again. Aljibes Cabernet Franc ferments in stainless steel vats. Malolactic fermentation takes place in 10,000-litre French oak barrels. It stays in the French oak barrels for 16 months.
