André Beaufort Ambonnay Grand Cru Brut is an organic, biodynamic, and natural sparkling wine crafted by André Beaufort in the Champagne appellation (France) using Chardonnay and Pinot Noir varieties.

André Beaufort is a prominent producer of organic wines. It all began in 1969 when he was diagnosed with an allergy to synthetic products, prompting him to avoid any sulphurous or chemical products that might affect him. Currently, he owns 6 hectares of vineyards in Ambonnay, classified as Grand Cru, and in Polisy, both located in the Champagne region.

Specifically, André Beaufort Ambonnay Grand Cru Brut originates from vines planted in a Grand Cru of Ambonnay. These are old vines cultivated organically and treated with biodynamic methods to maintain the vineyard's natural balance. Harvesting is done manually at the optimal ripening moment.

Once in the winery, the grapes for André Beaufort Ambonnay Grand Cru Brut are pressed and left to settle for 12 hours. Subsequently, spontaneous fermentation begins with native yeasts in stainless steel tanks. A second fermentation then takes place in the bottle, following the Champenoise method. Once ready, the disgorgement is performed by hand, and expedition liqueur made from concentrated grape juice (6 to 12 g/L) is added.
