About Ànima Negra 'AN/R'

The history of Ànima Negra began when Pere Obrador and Miguel Ángel Cerdà decided to craft wines using the indigenous grapes of Mallorca. This led them to work with varieties such as mantonegro, fogoneu, and callet. With the latter, which was traditionally used to produce young wines lacking in body, they have innovatively ventured with Ànima Negra 'AN/R', the island's first rosé utilising this variety. 
 
Ànima Negra 'AN/R' is not merely a wine. Ànima Negra 'AN/R' is a testament to the refinement and mastery that this duo has achieved in handling callet. This expertise, not possessed by everyone on the island, has been honed over many years, mastering not only the over 30-year-old vines but also the nutrient-poor, mineral-rich soils that are shallow and have low water retention capacity, found in the Son Negre area, in the municipality of Felanitx, in the south of the island. Here, the vineyards are cultivated under a profoundly respectful philosophy, where man adheres to the rhythms of the plant and not the other way around, as has historically been the case. This means that the plant dictates the timing, indicating the precise moment for harvest, which is conducted manually, in 10 kg boxes. 
 
Swiftly, Ànima Negra 'AN/R' is transported to the winery, where it is kept chilled overnight, reducing its temperature to 2 °C. Once the temperature is regulated, the grapes of Ànima Negra 'AN/R' undergo a dual selection process, both manual and optical, where the finest clusters are chosen. These berries are crushed and processed, extracting some of the must, which remains in contact with the skins for an entire day. This maceration, followed by pressing, extracts aromas and flavours that will later be enhanced during alcoholic fermentation. This process, entirely spontaneous and natural, is facilitated by the action of native yeasts. 
 
Finally, and no less importantly, Ànima Negra 'AN/R' undergoes several months of ageing in cement vats.

The sip is well-balanced, with a saline nuance that enhances its character and a slightly bitter finish that invites you to indulge once more. In 2024, favourable weather conditions contributed to a harvest that further accentuates its fresh and aromatic profile.
