Staples such as olives, cereals, oranges, mandarins, and grapes, cultivated with respect and affection, yield products like extra virgin olive oil, bread, pasta, orange and mandarin jams, and, of course, wines that perfectly encapsulate the finest expression of a region. A prime example is Giacomo Ansaldi, a renowned researcher of Sicilian viticulture, who on his estate in the Marsala area, skillfully produces all these typical Sicilian (Italy) products.
Wines such as Ansaldi Abbadessa Bianco Riserva are the result of this work philosophy. Made from the indigenous varieties grillo and zibbibo sourced from the "Vigna Abbadessa" vineyard with calcareous soils, situated at an elevation of 155 meters above sea level, the vines are managed under organic certification. In the winery, the grapes are hand-selected, destemmed, and cold-macerated for 8 hours. After gentle pressing, the extracted juice ferments in stainless steel tanks at a controlled temperature of 16-18°C using indigenous yeasts. The wine is then aged for 24 months in the same tanks on fine lees and a further 24 months in the bottle before being released to the market.
