About Aoton Savatiano

The savatiano grape is among the most extensively cultivated and produced in Greece. It's a bestseller you simply must not miss! Particularly in the region of Attica, situated in the heart of the peninsula, this grape is instrumental, spearheading the revolution of the area's new wines. To truly grasp and appreciate the roots and discern the trajectory of Greek wines, securing a monovarietal of this grape is essential.
 
Aoton Savatiano is a rather intriguing selection. Crafted by Aoton Winery within the PGI Attiki, this white wine is part of a highly original initiative led by Aoton. Today, this family-run enterprise, established five generations ago in the town of Peania, plays a pivotal role in the region by consistently opting to produce wines from their own vineyards. And it is from these very vineyards that all their bottles originate. In the case of Aoton Savatiano, the source lies within the six hectares that Aoton Winery has been cultivating organically since 1990 on sandy and gravelly soils interspersed with limestone rocks.
 
The enchantment of Aoton Savatiano begins at harvest when the clusters are picked at night. This particular detail is crucial given the prevailing climate of the area. Generally, Attiki is one of the driest and warmest regions in Greece, where vineyards only survive thanks to the sea breezes that provide coolness and moisture. Considering the high temperatures, it is only in the solace of the night that the perfect moment arises to ensure the grapes reach the winery in optimal condition. Following destemming and crushing, Aoton Savatiano is transferred to stainless steel tanks where the must will remain for about 10 days at a low temperature in contact with the skins. And then the alcoholic fermentation begins! The true stars of this biochemical process are the indigenous yeasts, native to the region and present on the grape skins, which commence their work spontaneously (without the addition of any nutrients). However, the truly fascinating aspect of Aoton Savatiano occurs when, every 24 hours, 10% of the fermented wine (settled at the bottom of the tank) is removed and the tank is topped up again from above with fresh grapes. Once fermentation is complete, Aoton Savatiano will undergo nearly a year of aging on its lees.
 
Be it a Saturday or any other day, there will never be an unsuitable moment to sample a bit of Aoton Savatiano.
