About Ausonia Trebbiano d'Abruzzo Apollo

Ausonia Trebbiano d'Abruzzo Apollo is a biodynamic white wine made by Ausonia with the Trebbiano variety in the DOC Trebbiano d'Abruzzo, in the Abruzzo region (Italy).
 
Pharmacist Simoni and engineer Francesca are a couple who decided to leave their jobs and make their dreams come true by setting up the Ausonia winery in Atri, in the province of Teramo. With a total of 12 hectares of biodynamically cultivated vineyards, they produce wines that are a pure expression of a defined territory.
 
Ausonia Trebbiano d'Abruzzo Apollo comes from the winery’s oldest vineyards. These are old vines planted in clay and calcareous soils at an altitude of 270 metres above sea level. They are cultivated using organic agriculture following biodynamic principles and the harvest is carried out manually at the optimum point of ripeness. 
 
In the winery, the Ausonia Trebbiano d'Abruzzo Apollo grapes ferment with the skins and with native yeasts in stainless steel tanks for 15 days. The wine then rests on the lees for 6 months before bottling. 
 
The Ausonia is a local butterfly that flies around the winery, and Ausonia Trebbiano d'Abruzzo Apollo is a biodynamic wine that is made through natural and spontaneous processes.

Ausonia Trebbiano d'Abruzzo Apollo 2018 is a white wine with scented aromas of white fruit and floral notes of jasmine. On the palate it is fresh, smooth and flavoursome. A velvety wine with good acidity and persistent hints of fruit.
