About Azienda Agricola Sottimano Barbaresco Pajoré

In the early 1960s, Rino Sottimano began penning his own legacy. Behind him, he had nothing but a degree in Oenology and the dream of crafting wines in his own winery. How has he managed to become today one of the most esteemed producers in the D.O.C.G. Barbaresco with so little? His determination and passion for his craft have been more than enough to expand his business from a single plot to 18 hectares, creating wonders like Azienda Agricola Sottimano Barbaresco Pajorè.
 
The very name Azienda Agricola Sottimano Barbaresco Pajorè reveals much about the character of this red wine. As indicated on the label itself, this red hails from the Pajorè vineyard, one of the most prestigious in the D.O.C.G. Barbaresco. Situated in the municipality of Treiso, this estate is rich with calcareous soils and clays. Its venerable vines, around 40 years old, are more than sufficient to give life to creations that emerge in the winery with spontaneous fermentations and without any intervention. The goal is clear, but it can only be achieved through one path: cultivating healthy grapes respectfully, without chemicals or herbicides that mask all that the Nebbiolo grape can express.
 
As has been noted, in this monologue Rino and his offspring have nothing to add; they simply sit back to listen, ensuring everything proceeds smoothly and intervening only when strictly necessary. Thus, Azienda Agricola Sottimano Barbaresco Pajorè will ferment naturally, before being transferred to wooden barrels where it will undergo maceration and malolactic fermentation. As per the regulations, all reds from the D.O.C.G. Barbaresco must spend a minimum of 12 months aging in barrels; and so it will be for Azienda Agricola Sottimano Barbaresco Pajorè, which will then rest for an additional 12 months in the bottle. A true gem indeed!
