About Barbadillo As de Mirabrás
Wines from old vines are regarded as wines with soul. This statement is not coincidental, as the yields from vines over 30 years old surpass those of younger wines. Among the myriad reasons provided, the foremost and most significant is that the vine has had ample time to acclimatise to the soil and climate. It's as though the wine glass captures a snapshot of the region where it grows.
This very spirit is what the Barbadillo winery sought to encapsulate with Barbadillo As de Mirabrás, a white wine crafted from old vines inspired by Mirabrás, the winery's other white that ferments in sherry casks. Unlike its sibling, As de Mirabrás does not touch wood and is produced from selected vines from the plots of Miraflores, Añina, Macharnudo, Campix, and Santa Lucía in Jerez de la Frontera (Cádiz).
All these small vineyard plots are historic in the region, having been for centuries the cradle of the finest wines from Cádiz. They predominantly cultivate the palomino fino, the true protagonist of the area, which acquires unique and distinctive nuances when grown on the albariza (a porous and brittle soil). This soil retains much of the rainfall that falls in Cádiz (and there is no shortage). Surprisingly, and contrary to common belief, the Andalusian province records 600 mm of rain annually, far more than La Rioja (300-350 mm) or Priorat (450-500 mm); however, the dry and hot summers tend to deceive, as this rainfall is mainly concentrated between October and April. For the rest of the year, the vine—under considerable water stress—is at the mercy of the Poniente, a cold and humid wind arriving directly from the Atlantic, which is crucial for the proper maturation of the vineyards in southern Andalusia.
In the winery, Barbadillo As de Mirabrás ferments in stainless steel tanks. Here, it will rest at low temperatures to naturally clarify the wine. Finally, after this period, Barbadillo As de Mirabrás is bottled in sherry-style bottles, preserving and safeguarding the essence of this branch of the Andalusian wine family.
