Perched on the Sicilian hill of Pianogrillo, the Azienda Agricola Biologica Baroni di Pianogrillo merges traditional techniques with cutting-edge systems to present wines like the Baroni Di Pianogrillo Otto/Otto Terre Siciliane. A single-varietal of Nero d’Avola originating from a unique vineyard with marl and clay-limestone soils at an elevation of approximately 480 meters. Eco-friendly practices and minimal intervention are employed to accentuate the exceptional quality of the fruit and the distinctiveness of the terroir. Following the manual harvest, the grapes are swiftly taken to the winery to be meticulously selected, destemmed, and gently pressed. Subsequently, fermentation takes place in large wood barrels at a controlled temperature and the wine is aged there for 24 months prior to bottling.
