This is how Benoit Courault, one of the most renowned winemakers in the world of Loire wines and French natural wines, strongly advocates for his horse named Noruega. In this manner, he not only promotes more sustainable and environmentally friendly agriculture but also takes care of his health by avoiding back pain, noise, and pollution. By working as naturally as possible both in his 5 hectares of old vines in Anjou (Loire) and in the winery, his wines are of exceptional purity, brimming with fresh, succulent fruit.

An example of his work can be found in Benoit Courault Le Verger de l'Étang, a red wine made from the local varieties grolleau and pineau d’Aunis from a consolidated 10-year-old vineyard in the village of Faye d'Anjou. Healthy vines planted in clay-loam soil, organically cultivated without machinery and hand-harvested at the optimal time of ripeness. In the winery, whole clusters macerate in fiberglass vats and ferment with native yeasts. Subsequently, the wine ages for 8 months in multi-use vats and is finally bottled unfiltered, unfined, and without the addition of SO2.
