Billaud-Simon Chablis Grand Cru Vaudesir is a barrel-aged white wine made by Billaud-Simon with the Chardonnay variety in the AOC Chablis Grand Cru, in Burgundy (France).
Bernard Billaud and his nephew Samuel Billaud come from a long line of winemakers, and together with winemaker Pierre Lédé, they have begun modernising the winery with the newest technology. And it has all been worth the effort, because as well as creating very pure, elegant wines, they now also have a great international reputation.
Billaud-Simon Chablis Grand Cru Vaudesir comes from an approximately 0.5 hectare plot with well drained soils composed of mainly clay and limestone. The team use environmentally friendly agriculture to preserve the maximum expression of the terroir and the fruit. The harvest is carried out manually when the berry reaches 12 or 13º.
In the winery, the Billaud-Simon Chablis Grand Cru Vaudesir grapes go through an pneumatic press and the resulting must cold macerates for 5 to 7 days. Fermentation lasts between 15 and 18 days and the wine ages for about 14 months.
