About Billaud-Simon Petit Chablis

Billaud-Simon Petit Chablis is a single-variety Chardonnay white wine produced by the Billaud-Simon winery in the AOC Petit Chablis in Burgundy, France.

 

To make the Billaud-Simon Petit Chablis wine, the grapes are manually selected and classified, then gently pressed to extract the musts, which maintains all the variety’s characteristics. The must goes through a static cold settling in stainless steel tanks for 12 to 24 hours to obtain a transparent juice. Alcoholic fermentation takes place naturally in stainless steel tanks and the resulting wine is bottled in the spring following the harvest.

 

Domaine Billaud-Simon is thought to be one of the best winemakers in Chablis, a region known as the “Porte d'Or de la Bourgogne” (Golden Gate of Burgundy). The Domaine has around 20 hectares in the best parts of this French wine region and they produce wines that are rarely aged in oak barrels and are identified by their characteristic and unique minerality and sharp edge. They use Chardonnay clusters that grow in an exceptional terroir of marine sediments, algae and shells formed millions of years ago and known as Kimmeridgien soils, giving Chablis wines a unique personality.           

 

2019

Billaud-Simon Petit Chablis 2019 is a vibrant white wine. The bouquet is opulent, forthright, and animated with hints of citrus, white blossoms, and mineral essences. On the palate, it is youthful and smooth, featuring nuances of fruit (lemon, grapefruit, apple) and ferns, intermingled with mineral and iodine notes.
2018 Billaud-Simon Petit Chablis 2018 is a profiled white wine with aromas of candied fruit, hints of iodine and a characteristic mineral note. On the palate it is direct and powerful to begin with, with a sharp edge and some citrus and fruit notes. A fresh and delicate white wine with balanced acidity and plenty of character.
