About Butin Chateau Chalon

If you have never heard of the “vin jaune” (yellow wine) from Jura (France), you obviously haven’t had chance to taste it yet. Considered by many eminent winemakers as one of the best white wines in the world, it is an unusual wine with a production method as original as it is mysterious. It starts life in Château Chalon, a commune whose vineyards are classified under the AOC Château-Chalon, but can also be found in Arbois, L'Etoile and Côtes du Jura. However, two elements are essential for the production of this Jura gold: a blue or black loamy soil and the Savagnin grape. Someone who knows this perfectly well is Philippe Butin, a winegrower working on his family’s 5.5-hectare estate on the slopes of Lavigny, who makes wines, mainly white, from grape varieties that his family has been cultivating for three generations.

His Butin Chateau Chalon “vin jaune” comes from this same estate with Savagnin grapes. Following a traditional cultivation method and a late harvest, he faithfully harvests by hand. Once in the winery, the grapes are meticulously selected, destemmed and gently pressed to make a top quality must. After temperature-controlled fermentation, the wine is transferred to oak barrels where it spends 8 years under a yeast cap that gradually grows mysteriously on the surface of the wine and is responsible for protecting it from oxidising and slowly transforming it into yellow wine.

A long wait that is well worth it because this is a superb, mineral and powerful “vin jaune”. Presented in the unique chunky 62 cl. “carnation” bottle, Butin Chateau Chalon is an earthly miracle that you can easily enjoy for more than a century.

Butin Chateau Chalon 2011 is a complex white wine with powerful aromas of white fruit, citrus notes, hints of mushrooms and truffles and hints of undergrowth. The palate is unctuous, lively and very expressive. A pleasantly oily wine with lively acidity and an upbeat finish with dried fruit, anise and tangerine.
