About Calalta Undercover

Undercover is something that does not reveal everything at first glance. This concept perfectly encapsulates the essence of this wine. It is an honest and straightforward expression that conceals depth, territory, and a very clear philosophy behind each bottle.

Calalta Undercover originates from Calalta, an artisanal and organic viticulture and winemaking project located in the Veneto region, in northern Italy, on the hills at the foot of Monte Grappa. It is a small family winery led by Nicola Brunetti and his partner Giulia, who have been cultivating their own vineyards using ecological and minimal intervention methods since 2017.

The estate spans 16 hectares where vineyards, forests, olive groves, and meadows coexist, creating a rich biodiversity and a balanced ecosystem. This natural diversity is reflected in wines that prioritize the expression of the terroir, the character of the soil, and the climate over technical artifices.

Undercover is one of the most representative labels of the project. A wine that does not seek to impose but rather to surprise through simplicity and authenticity. Crafted from the Merlot variety, sourced from organic vineyards situated at an altitude of 180 meters, on red clay soils rich in flint, the harvest is carried out by hand, in plastic boxes, taking utmost care of the grape's integrity.

In the winery, the grapes are selected with the aid of a vibrating table. Thirty percent undergoes carbonic maceration with whole clusters, imparting freshness and fruit, while the remainder is destemmed and macerated for four days with the skins in stainless steel. Fermentation is conducted with native yeasts, true to the vineyard's identity. Finally, the wine ages for nine months in stainless steel, unfiltered, preserving all its purity and natural expression.

Undercover is an invitation to discover what lies behind a simple appearance. A sincere, vibrant wine deeply connected to the land that gave it life.
