About Cap de Barbaria

Cap de Barbaria is a VT Formentera wine produced by the Cap de Barbaria winery from Cabernet Sauvignon, Merlot, Monastrell and Fogoneu, the same grape varieties used to produce Ophiusa.
In order to produce Cap de Barbaria, the maceration with the skins is prolonged as much as possible, even after the alcoholic fermentation is completed, in order to extract to the utmost the tannic components of the grape skins.
The ageing of the Cabernet Sauvignon and Merlot grapes takes place in different types of new and second-year French oak barrels whereas the varieties Monastrell and Fogoneu are aged in American oak barrels. The duration of stay of the wine in the barrels is variable and only the taste test, that is the wine tasting, is which decides the changes of barrels and the optimal moment for separating the wine from the wood.

2007 The warm, full bodied, bulky and embracing Cap de Babaria has a broad and powerful attack and a very tasty mid palate with notes of fruit and very noticeable wooden aromas. It has a surprising saline touch. Its excellent acidity provides it with a good freshness and its tannins are well balanced and pleasant. Its finish is not very long but it has a good persistance and leaves toasted and herbal aromas. Very elegant and tasty wine. A great wine that will surprise you!

Intense dark cherry colour with a maroon edges. Clean and bright wine with abundant tears that stain the glass.

Very intense, complex and fresh aromas with lots of ripe black fruit that gains in expressiveness when the wine opens up. Its abundant notes of spices nuance the intensity of the fruit. When it opens up, toasted, smoked and milky notes are released along with lots of chocolate, coffee and tobacco. A touch of liqueur, subtle floral and vegetable notes are also noticed on its powerful balsamic background. A wine that gains in complexity with time.
