About Caraballas Ecológico Sector 2.8

In the vineyard of the Las Caraballas estate, decisions are not made by consulting a spreadsheet but by observing what happens in the field. For years, rodents and vole infestations have been a constant headache in the region's agriculture. The usual response is to resort to poisons and chemical rodenticides, but here they chose to seek a different solution alongside the NGO GREFA. Artificial nesting boxes were placed on the property to attract populations of common kestrel, barn owl, and long-eared owl. These birds of prey, which were in decline due to habitat loss, have returned to the area and naturally control the pests. The raptors feed, the crops remain healthy, and the ecosystem remains intact. It's as simple and real as that. From this direct work with wildlife emerges an honest white wine that reflects the health of the land where it grows.

From Medina del Campo, in the province of Valladolid, this wine is produced under the indication Vino de la Tierra de Castilla y León. The grapes come from the plot known as Sector 2.8, within the Las Caraballas estate. The vines, over 15 years old, originate from selected basal material from old vineyards in the area. The vineyard is situated on a plain surrounded by pine forests at an altitude of between 700 and 750 metres above sea level, ensuring cool nights and hot days. The soil is calcareous with a sandy loam texture, very deep, reaching between 1 and 3 metres of layers accessible by the roots. The climate is dry continental, with harsh winters and intense summer sunshine. True to the Verdejo variety, the cultivation is managed strictly organically, discarding synthetic herbicides and limiting the yield to about 5,200 kilograms per hectare.

The winemaking of Las Caraballas Ecológico Sector 2.8 aims to preserve the grapes as they arrive from the field, without adding chemical oenological treatments. The harvest is done by hand, and the grapes undergo a short cold maceration with their skins to extract the varietal aromas. The must is obtained through direct pressing and undergoes a light natural static settling in stainless-steel tanks, a process of letting the juice rest cold so that the solid parts fall to the bottom by their own weight. Alcoholic fermentation occurs in polished concrete tanks using only indigenous yeasts. After fermentation, the wine undergoes ageing on its fine lees, gaining volume and structure on the palate before bottling.
