Ever active in advocating for small producers, Stefano transformed his estate, Cascina Degli Ulivi, into a biodynamic sanctuary in the hills of Gavi, Southern Piemonte, where the term "natural" takes on its fullest meaning. Each wine embodies respect for the land, patience, and creativity.

An exemplar of this philosophy is Cascina Degli Ulivi Bellotti Ivag, a wine crafted from the cortese grape variety, grown on clayey soil with southern exposure. Its fermentation is carried out with indigenous yeasts in 25 Hl acacia barrels, and it spends 15 months on its fine lees, developing a complexity and elegance that only decades of care and passion can bestow.
