About Casebianche La Matta

When someone defies traditional norms, they are sometimes labelled as "mad". And there is nothing more irreverent than Casebianche La Matta, an ancestral sparkling wine that challenges all the conventions of the classic method.

Behind this boldness are Elisabetta Iuorio and Pasquale Mitrano, two former architects who decided to completely transform their lives. They left behind blueprints and construction sites to establish, in the year 2000, the winery Casebianche in the eponymous neighbourhood in Torchiara, province of Salerno (IGT Paestum), within the Cilento, Vallo di Diano and Alburni National Park, now a UNESCO World Heritage Site.

The name of the wine, La Matta—"the madwoman" in Italian—could not be more fitting. It embodies its fun, irreverence, and playful character. Crafted from the Bianconuova vineyard, in the heart of Cilento, the fiano grape vineyards benefit from a warm climate near the sea and soils ideal for producing wines with character. Elisabetta and Pasquale, in collaboration with the young oenologist Fortunato Sebastiano, tend to the grapes with utmost respect for nature, using only organic fertilisers and sustainable practices.

The fiano grapes are pressed whole, without crushing or destemming. The must is divided into two: one part ferments to form the base wine, while the other is used as tirage liqueur to initiate the second fermentation in the bottle. This means that no expedition liqueur is added. Unlike the classic method, the wine is not disgorged, thus preserving its natural yeasts and authentic character.

Playful, vibrant, and astonishing, La Matta is a statement of creativity, irreverence, and respect for nature, a genuine celebration of the bold spirit of Casebianche.
