About Cati Ribot Escursac

The past was always better… or was it? This phrase, attributed to the Spanish writer and philosopher Jorge Manrique in his work “Coplas por la muerte de su padre” (1476), invites us to reflect on the fleeting nature of life and the power of memories. A nostalgic view that makes us look back with longing, appreciating what seemed simpler, more authentic. Inspired by this connection to the origins, Cati Ribot, a winemaker from the island of Mallorca (Spain), has brought her project Ve d’Avior—which in Mallorcan means "comes from times past"—to life as a tribute to the past and the roots. Her philosophy focuses on the recovery of native varieties and the creation of wines that respect nature to the utmost, with minimal intervention in the winery.

One of the great exponents of this vision is Cati Ribot Escursac, a wine that encapsulates the soul of Mallorca, crafted from the revived variety escursac and cultivated in a clay-limestone soil known as Call Vermell, which imparts character and minerality to the wine. In the winery, the entire process reflects that connection to the past and authenticity: the harvest is done manually, the grapes are handled with strict carbonic maceration (without destemming) and are gently pressed to preserve the freshness and essence of the grape. Fermentation concludes with indigenous yeasts in red clay amphorae, a nod to ancestral methods that endow the wine with a unique personality. Finally, it rests for 4 months in this same vessel, achieving a subtle ageing that enhances its natural qualities.

Embodying that glance towards the past, not from nostalgia, but from the reclamation of the authentic and essential, Cati Ribot Escursac is a living tribute to Mallorcan roots, to the purity of native varieties, and to a philosophy that respects nature in its most honest form.
