About Cavarodes Côtes du Jura Vin Jaune

Although Jura is the smallest wine region in France, it is also the one that produces some of the most traditional style French wines. Its Vin Jaune is an example of this. A yellow wine made exclusively from the Savagnin variety and vinified in the Jerez style, under a cap of native yeasts for at least 5 years. Etienne Thiebaud, a local winegrower, has a small family estate in the village of Cramans where some of the most unique wines of the AOC Côtes du Jura are produced. With only 4.5 hectares of vineyards (ranging in age from 15 to 115 years old) at his Domaine des Cavarodes winery, he reveals charming wines with an endless profile.

His Cavarodes Côtes du Jura Vin Jaune wine comes from vines planted on the north side of the village of Loue. This is a completely organic vineyard where Etienne applies infusions and herbal preparations in an artisan way and based on the lunar calendar.  Once the grapes are harvested, the must is fermented and the wine is stored in used wooden barrels without filling them completely. The wine stays there for 7 years, protected by the yeast layer that creates the wine. This means the contents are gradually refined without the risk of oxidation by air. The result is impressive. An icon of the Jura region, with good minerality and vibrant energy, this wine has earned more than one award.

Cavarodes Côtes du Jura Vin Jaune 2010 is a distinctly contoured white wine, boasting a deep golden hue complemented by scents of candied fruit, citrus, and nuances of nuts and spices. On the palate, it is vivacious, intricate, and captivating. This wine possesses a significant structure and a singular character.
