About Cavarodes Vin de Pays de Franche Comté Blanc

Cavarodes Vin de Pays de Franche Comté Blanc is a natural white wine made from Savagnin and Chardonnay varieties and cask-aged wood by Domaine des Cavarodes. A wine created in the French Jura area and classified as Vin de Pays de la Franche-Comté.

Domaine des Cavarodes is the project of Etienne Thiébaud, a young winegrower who, at the age of 22, took over the family's small estate in Cramans, a small town along the Loue River, to produce wines of dazzling delicacy and purity.

Cavarodes Vin de Pays de Franche Comté Blanc comes from old vineyards planted on mainly limestone and clay soils of Kimmeridge, a kind of terroir that’s not very common in Jura. They’re cultivated using organic agriculture and biodynamic treatments, and the harvest is carried out manually when the grapes reach optimum ripeness.

In the winery, the Domaine Valette MesdemoiZelles Blanc grapes are gently pressed, and the resulting must ferments spontaneously with native yeasts. The wine is then aged in old foudres for 12 months. Finally, the wine is bottled without filtering, clarifying or adding sulphites.

Ascribed to Vin de Pays de la Franche-Comté, a classification that gives a regional approach to wine, Cavarodes Vin de Pays de Franche Comté Blanc is a complex, persistent and very mineral wine.
