About César Fernández Díaz Carremolino

The D.O. Ribera del Duero, though relatively young, is one of the most established appellations, with wines that are globally recognised for their unique style. However, encountering a winemaker with a fresh and distinct approach is akin to a breath of invigorating air for the region. César Fernández Díaz emerges as a genuine breath of fresh air. This young oenologist, who has managed to carve out a name for himself, has introduced a rejuvenating approach that emphasises freshness, elegance, and an unwavering respect for the terroir. Despite his youth, César's connection with the vineyard began in his childhood, learning from his mother, who always owned vineyards and sold her wines to friends in the region. This bond with the land led him to pursue academic studies in viticulture at the Polytechnic University of Madrid, and later, to gain international experience in wineries in Sierra de Gredos, Ribeira Sacra, and New Zealand, among others. With all this background, César has adopted a winemaking philosophy that avoids excessive power, always seeking a more mineral, fresh, and balanced expression.

This approach is embodied in his wine César Fernández Díaz Carremolino, a red that stands out for its complexity and freshness. A blend of indigenous varieties such as tinto fino, listán prieto, bastardo, bobal, and albillo, sourced from century-old vineyards cultivated at an altitude of 870 meters on limestone and pebble soils under organic and biodynamic practices. In the winery, with minimal intervention, it ferments with native yeasts and ages for 12 months in used barrels, which imparts subtlety without detracting from the mineral and fresh character of the terroir.

César Fernández Díaz Carremolino is a clear reflection of César's vision: a wine with great personality, respecting the terroir, without sacrificing elegance or freshness.
