Château Cantemerle 2025 is a red wine that captivates at first sight with its intense and profound colour. About Château Cantemerle
The A.O.C. Haut-Medoc is situated in Bordeaux, in the southwest of France, between Saint-Seurin de Cadourne and Blanquefort. This area, stretching approximately 60 kilometres from north to south, is unparalleled in the world due to its climate and soil. The former is warm and humid, bathed in sunlight and with ample air circulation; the latter is highly diverse, predominantly composed of gravel and silica. These elements are perfectly embodied in Château Cantemerle, a red coupage crafted by the château of the same name located in this region of Aquitaine. Specifically, this enterprise, established in the 16th century, is one of the oldest and most significant estates in the region, located in the southern part of the Bordeaux-Medoc peninsula (very near the villages of Maco and Ludon). After being owned by the Villeneuve and Dunos families, this property has now been acquired by Groupe SMA (a major construction insurance mutual), which continues to produce outstanding wines. On its lands lives the blackbird (merle in French), a bird that initially gave the estate its name (Cante Merle, which translates to Song of the Blackbird).
Currently, Château Cantemerle boasts a total of 98 hectares of vineyards (95 of which are in production), flourishing on gravel and silica soils, with pebbles and poor soils where the vines (averaging 38 years old) struggle to survive, resulting in grapes of great concentration. Similarly, these pebbles play a decisive role in the ripening of the grapes, reflecting the sun's rays and retaining some of the heat during the night. Under these conditions, the cabernet sauvignon, merlot, cabernet franc, and petit verdot are primarily cultivated (in that order). The work is entirely manual: from pruning (following the Médoc Double Guyot system) to harvesting. This latter step is particularly crucial, with special efforts made in selecting the best bunches (conducted on four tables, with four selectors responsible for discarding damaged clusters). This work is carried out separately, keeping the grapes from each plot identified at all times. Only in this way can the true essence of each be extracted.
From here, Château Cantemerle proceeds directly to the destemmer, where the berries are separated from the stalks. At this point, before moving to the crusher, another selection is made, eliminating all elements that might interfere with the wine's quality. Once crushed, Château Cantemerle begins to ferment in the various rooms that form part of this winery, where the tanks are organised according to materials: oak tronco-conical, stainless steel cylindrical, or cement cubic. In the case of Château Cantemerle, wooden and cement vats will be used, while the remaining tanks are reserved for the younger vineyards. This process, in which the yeasts will convert the must into wine, will last between 28 and 30 days. Once completed, the true secret of Château Cantemerle arrives with the selective racking by layers. This operation is an innovation by this company where, after bleeding the tank, both the top of the cap (with dry and oxidised skins) and the bottom (with seeds and sediments) are removed. Only the heart of the pomace, which possesses the finest phenolic elements, will be utilised.
Finally, Château Cantemerle will undergo ageing for 12 months in French oak barrels (35% of them new), followed by 4 months in vats after the coupage.
