About Château D'Armailhac
Experience, observation and patience are the three pillars which Chateau D'Armailhac, at A.O.C. Pauillac, is built on, with its red wine production.
Experience comes by itself. And no wonder, since this property is one of the oldest in the area, founded in 1680 by Dominique and Guilhem Armailhacq, two brothers listed as the first owners. This pairing marks the beginning of four centuries of history which have molded a unique, incomparable wine, with a quality that places it among the top wines in the Cinquièmes Crus of the Official Classification of Bordeaux Wines of 1855.
Of course, this experience is based on know-how, on observation. This means that the same winemaking process won’t always be followed, as the work in the vineyard and in the winery depends on each vintage. This is achieved with passion and continuous work, where the condition and ripening of the 70 hectares of vineyards (located north of Pauillac, with an average age of 46 years) is monitored on a daily basis. In this area the typical varieties of the appellation (Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot) grow on gravel soils with a clay and limestone base.
At the end of the day it’s all a matter of know how, waiting and giving time to time. Nothing can be rushed at Chateau D'Armailhac, just wait for the right moment to come. This moment will be decided by the analysis and research laboratory which, after analyzing acidity, sugar, color and tannins, establish the ideal day for the harvest, which is carried out plot by plot, by hand (as a general rule, young vines are harvested before the old ones). Upon arrival at the winery, where they are destemmed, the Chateau D'Armailhac bunches are vatted and distributed in the 23 stainless steel tanks currently located in the vat room. Each of them will have a different size, depending on the different plots of the vineyard. After fermentation (which lasts several weeks) and the subsequent devatting, drawing off and pressing (where the pomace is separated from the wine), Chateau D'Armailhac is transferred to the barrel room. Here it will rest for 18 months in the property's almost 1,000 barrels, including new, second and third use barrels. After clarification with egg albumin and subsequent stabilization, Chateau D'Armailhac will be bottled.
As the Chinese philosopher Lao-Tse said: "The ordinary man, when he undertakes something, spoils it by being in a hurry to finish it". The last thing we want is for this to happen to Château D'Armailhac! So it's best to get comfortable, be patient and wait. But we promise the result is worth the effort.
