About Chateau Saintayme

Château Saintayme is a 100% Merlot red wine made in the domaine of the same name within the A.O.C. Saint-Émilion Grand Cru, in Bordeaux (southwest France).
 
Château Saintayme is one of the strongholds that was under the command of Denis Durantou, the famous Bordeaux winemaker and leader in this denomination who leased these vineyards in St-Étienne-de-Lisse (a village near Saint-Émilion). This project was added to the other companies managed by this winemaker on the right bank of Bordeaux, like Château Les Cruzelles and Château Chenade (among others). 
 
Although now deceased, Durantou has left his great legacy in the hands of Alix, Noemie and Constance, his three daughters, who are assisted by Olivier Gautrat (who has worked with the family for the past 20 years). They are now in charge of making Château Saintayme, a red wine from the 9 hectares that the family continues to lease, where the main variety is Merlot. The soils here are increasingly cooler, made up of limestone, clay and gravel, growing vines with an average age of 35 years old. 
 
In the winery, Château Saintayme is vinified in stainless steel tanks, where it also undergoes malolactic fermentation. This is because, according to Durantou, this methods allows for better yeast and temperature control. After this, 30% of Château Saintayme will spend an average of 14 months aging in new French oak barrels. But that’s not all. The best bit? Its great aging potential, which makes it tremendously interesting after 3 to 4 years.
