About Chivite Colección 125 Rosado

Long before they became fashionable, DO. Navarra - particularly Julián Chivite Marco - was already committed to rosé wines. Fresh, flavourful, and perfect for any occasion. Among all the productions, some stand out more than others. At the pinnacle of perfection, meeting all quality standards, is Chivite Colección 125 Rosado. 
 
Chivite Colección 125 Rosado is regarded as one of the finest rosés in Spain. This is not merely our opinion; the Spanish Association of Wine Journalists and Writers has highlighted this marvel as one of the bottles not to be missed. Achieving this title is no coincidence. Its barrel fermentation and subsequent ageing on lees bestow Chivite Colección 125 Rosado with a depth and character that are exceedingly rare to find in other rosés. 
 
Chivite Colección 125 Rosado is cultivated in Legardeta, a 300-hectare estate located between the Pyrenees and the Ebro basin, where tempranillo and garnacha mature slowly. This is primarily due to its location in the northernmost part of the peninsula, approximately 40 km from Pamplona, where an Atlantic-continental climate prevails, with temperatures rarely soaring. Chivite Colección 125 Rosado is harvested manually, in 200-kilogram boxes, ensuring it remains intact and in good condition throughout. 
 
Once at the winery, where the finest clusters are selected, Chivite Colección 125 Rosado is crushed, creating a grape must that is left to macerate for a minimal period. After this waiting interval, during which the wine's aroma and flavour are enhanced, the must of Chivite Colección 125 Rosado is separated from the solids through bleeding. This method, aimed at obtaining the best possible must, involves allowing the grape must to drain without applying pressure that might carry substances and particles from the grape skins, which could impart bitterness to Chivite Colección 125 Rosado. Finally, this free-run juice (also known as flower must) is transferred to 225-litre French oak barrels, where it ferments and rests on its lees for up to 12 months.

2016 Chivite Colección 125 Rosado 2016 is a balanced rosé wine with body. The aromas of fresh red fruit perfectly combine with the toasted notes of its ageing in the barrel. This vintage gives it silkiness and volume without too much opulence.

Intense and expressive aromas of red fruit on a slightly smoked background. The sweet and hot spices are released along with delicate floral notes which round out this unique rosé wine.
