With this creation, the Chivite winery once again demonstrates that in the realm of winemaking, they are unparalleled. Indeed, this single-varietal moscatel, which undergoes several months of ageing on its lees, is regarded as one of the winery's finest wines. And rightly so, for during its production, the grapes are meticulously selected, berry by berry, ensuring that only the finest of each vintage enters the winery. But let's take it step by step.
 
Chivite Colección 125 Vendimia Tardía originates from El Candelero, a vineyard planted in 1969 in the Navarrese region of Ribera Baja, situated in the southern part of the community, where alluvial and gravelly soils abound, well-drained, allowing the vines to thrive in good health. This detail is crucial, as this excellent aeration enables the clusters to achieve a state of overripeness while maintaining excellent sanitary conditions, without facing any type of disease (particularly fungal). This aspect is key to conducting a late harvest, marked by the arid and sunny weather characteristic of the Mediterranean-continental climate of the area. 
 
Chivite Colección 125 Vendimia Tardía is harvested manually and in stages, cutting only the clusters at their optimal point, with the correct sugar concentration. From there, Chivite Colección 125 Vendimia Tardía is taken to the winery, where it is pressed and transferred to French oak barrels for fermentation until a high residual sugar content is achieved. Finally, Chivite Colección 125 Vendimia Tardía rests on its lees for several months until it is ready for bottling.

Chivite Colección 125 Vendimia Tardía 2018 is a sumptuous sweet wine. On the nose, it is profound and graceful, with prominent notes of stone fruits, honey, withered blossoms, and white florals. The palate experiences a harmonious and delectable balance. It is enveloping with a rich, unctuous texture. The finish is extensive, accented by nuances of dried fig.
2016 Chivite Colección 125 Vendimia Tardía 2016 is a sweet, complex and refined wine. In this vintage, it shows the balance between sweetness and freshness thanks to its good acidity. The aromas of candied white fruit, quince and citrus peel stand out. A great wine for pairing.
2010 Embracing on the palate. Very well balanced, silky, light, good acidity and a citrus vivacity. Long finish.
