About Claude Cazals La Chapelle du Clos Blanc de Blancs Grand Cru

Twenty-five years ago, Delphine Cazals and her father Claude planted a vineyard in Oger, in close proximity to a chapel. It is here that the Claude Cazals La Chapelle du Clos Blanc de Blancs Grand Cru is harvested, the sparkling wine that originates from this vineyard, under the AOC Champagne.

This area, situated in the Marne region, is the birthplace of these renowned sparkling wines from the northwest of France. In the case of Claude Cazals, the sole grape variety cultivated is Chardonnay, one of the three grapes permitted by the AOC Champagne. Specifically, this company, established in 1897, currently possesses 9 hectares of vineyards classified as grand cru. Here the vines flourish on the chalky soils so typical of the region, characterised by limestone, and under an oceanic climate with continental influences.

In the winery, the primary distinctiveness of Claude Cazals La Chapelle du Clos Blanc de Blancs Grand Cru lies in its barrel aging. It all begins with manual harvesting, where the grapes are collected and taken to the pressing centres. Once the must is obtained, and after settling, the must ferments in stainless steel tanks at a controlled temperature. This alcoholic fermentation is followed by malolactic fermentation and barrel aging in oak, where Claude Cazals La Chapelle du Clos Blanc de Blancs Grand Cru comes into contact with wood. Without any blending or mixing, the wine is bottled and spends 6 years in the winery, in contact with the lees, where it undergoes secondary fermentation and transforms into sparkling wine.

Today, Claude Cazals has passed away, yet beyond spatial and temporal boundaries, the bond between father and daughter remains more vibrant than ever, thanks to Claude Cazals La Chapelle du Clos Blanc de Blancs Grand Cru: the perfect champagne for toasting with dad.
