David Duband Hautes Côtes de Nuits Blanc is a barrel-aged white wine made by David Duband with the Chardonnay variety in the French denomination AOC Bourgogne, in Burgundy.
 
Located in Chevannes, in the heart of the Hautes-Côtes de Nuits, the David Duband winery was founded in 1991 with the aim of expressing the subtleties and great diversity of Burgundy. With 17 hectares of their own vineyards, this passionate local winegrower produces wines within 23 prestigious denominations. These are lively, spicy and elegant wines with a clear Duband style.
 
David Duband Hautes Côtes de Nuits Blanc comes from 50-year-old vines planted in limestone and marl soils. The team use environmentally friendly agriculture, without any chemicals that could harm the natural balance of the terroir and the vine. The harvest is carried out manually at the optimum point of ripeness. 
 
Leaving 40% with the stems on, the David Duband Hautes Côtes de Nuits Blanc grapes are gently trodden. The must then rests for 2 weeks in tanks where it ferments spontaneously with native yeasts. Aging takes place 30% in new barrels and 70% in 1, 2 and 3-year-old barrels for 14 months. Finally, it is bottled without filtering or clarifying.
