About Davide

As Segismundo and Calderón de la Barca proclaimed in their work, Life is a Dream, "For all of life is a dream, and dreams themselves are only dreams." And what better way to live and dream than with a fine glass of Albariño and Davide.

After all, dreams are the fundamental pillars of this winery, founded in 1902 by grandfather José Acha. Today, the baton has been passed to David Acha, the grandson and third generation, who has dared to envision a new destiny for this winery. And when you dream big, you achieve great things, such as Davide being recognized as the best Albariño of the year 2022.

Among more than 53 brands, this single-varietal Albariño, crafted in the Valle del Salnés region (within the Rías Baixas area), the historic zone for Albariño, stood out. The vineyards, over 25 years old, are located in this northwestern part of Spain, very close to the sea (between the Arousa and Pontevedra estuaries). The soils here are composed of small micro-terroirs, poor and sandy-loam, with a primary composition of marine shell fossils. This, combined with the rainfall and mild temperatures (characteristic of the Atlantic climate), creates the perfect conditions for cultivating this late-ripening variety. In the case of Davide, this work is carried out through what they call reflective viticulture, a new concept (coined by them) that consists of "a unique way of working, understanding, and respecting the vineyard."

In the Davide winery, the wine is made using ancestral, non-interventionist methods, from small spontaneous fermentations of native yeasts. Upon arrival at the winery, the Davide clusters are destemmed and go directly into a tank where pre-fermentation maceration will take place. This step is very common in white wines, as this prolonged contact between the must and the skins—at low temperature—extracts aromas and flavors from this great variety. Davide is then pressed again to separate the liquid from the solid parts and left to rest. Once clear, when all the suspended substances have settled to the bottom of the tank, it will be time for fermentation to begin. Throughout this process, where the native yeasts will take the lead, the tank temperature will be controlled, always kept at around 18°C. However, what will ultimately give Davide its true finesse will be its nine months of aging in stainless steel tanks on its lees (with frequent battonages) and its two months in the bottle before being released to the market.

Davide 2022 is an aromatic, crisp, and sophisticated white wine. It is characteristically complex, brimming with nuances both on the palate and olfactory levels. The tasting journey commences visually with a radiant yellow hue accented by greenish tones, and unfolds into a vast spectrum of scents including white blossoms, aromatic herbs, mint, grapefruit, lemon, lychee, and stone fruits. On the palate, it retains a portion of this fruity character, complemented by a robust structure and full body. Exceptionally smooth and flavorful. The finish is lengthy and robust.
