A calm, focused, and slightly introverted winemaker, Grappe has built his reputation by crafting natural wines devoid of any sulphur, wines that astonish with their freshness, honesty, and straightforward character.

Didier is unafraid to challenge conventions. He seals all his bottles with screw caps, favours hybrid grapes, and has declared he will never again plant the traditional varieties of the Jura. His approach is radical, yet deeply respectful of the vine and the terroir. No added yeasts, no chaptalisation or acidification, and no filtration or fining. Each bottle is a pure expression of the grape and the soil from which it sprung.

A clear example of this philosophy is his Didier Grappe Traminer Champ Rouge. Crafted entirely from savagnin rosé (or traminer) organically grown on grey and red marl soils, the wine follows the ouillé vinification method and is aged between 12 and 18 months in oak barrels, without any fining or filtration, and of course, without added sulphur. The result is a wine that exudes authenticity.
