About Domaine Bobinet Du Rififi à Beaulieu

The film 'Rififí' by Jules Dassin, one of the most outstanding works of the noir genre in Europe, is a French film from 1955 that tells the story of a criminal who has just been released from prison with the intention of rebuilding his life after a 5-year sentence. However, his intentions are cut short when he learns that his former girlfriend is with a notorious gangster. It is then he decides to strike jewelry store in Paris with former comrades, using the 'rififi method', which means by drilling a hole in the building. We don’t know whether Sebastien and Émeline of Domaine Bobinet were inspired by this film in the making of Domaine Bobinet Du Rififi à Beaulieu, but it’s true that, like the thieves of 'Rififi', their cellar in Beaulieu was created by boring a cave some 500 m deep. A surprising limestone cliff in Saumur on the banks of the Loire, the inside of which maintains a stable 12 degrees all year round and allows wine to be made with minimal chemical intervention. Surrounding it are the vineyards which Seb (as he is known) inherited from his grandfather. Old vines planted in the same limestone, but of different ages and densities, which, worked with the utmost respect, produce wines of great purity.

Their Domaine Bobinet Du Rififi à Beaulieu is a natural sparkling wine made from the Chardonnay and Chenin varieties according to organic precepts and without any chemical products which could harm the natural balance of the terroir. The vines are 45 years old, planted in clay and limestone soils and harvested by hand at the optimum moment of ripening in 20 kg crates. In the winery, the Chardonnay grapes begin to ferment and then Cheninis added. Before fermentation finishes, the must is closed in the bottle and the yeasts are allowed to gently break down the sugars. After aging for a few months on the lees, the wine is disgorged to remove the tank and refilled with the same wine.

Domaine Bobinet Du Rififi à Beaulieu 2020 is a fruity red wine with aromas of fresh pear and acacia blossom. On the palate it’s ample, tense and elegant. A natural sparkling wine with fine creamy bubbles, a beautiful freshness and a fruity flavor, but without being sweet.
