About Domaine Bonnardot Crémant de Bourgogne

Jules Chauvet was a French oenologist and chemist who profoundly influenced the wine industry in the 1980s. Advocating for the notion that natural wines are more genuine and better reflect the terroir, climate, and grape quality, he is heralded as one of the earliest proponents of the movement toward wines produced without chemical additives and with minimal human intervention. Among the multitude of vintners and oenologists who have embraced his work philosophy, we encounter Elisabeth and Christophe Bonnardot. This couple, since taking the helm of her family's estate in the Côte d'Or, established in 1470, have set a goal to transcribe as faithfully as possible the influence of the terroirs on their wines, while respecting the vines and the soils. This is an achievement only possible through natural vinification.

Today, their two sons Ludovic and Emilien Bonnardot continue the family legacy, and with wines like this Domaine Bonnardot Crémant de Bourgogne, a sparkling wine produced using the traditional Champagne method, they demonstrate that Domaine Bonnardot still has much to contribute. Crafted from chardonnay and aligoté grapes grown under organic and biodynamic practices, the wine undergoes an initial fermentation with indigenous yeasts in the winery, followed by a secondary fermentation in the bottle where the wine matures on its lees.

Floral, fruity, and refreshing, Domaine Bonnardot Crémant de Bourgogne is a pure reflection of the terroir. A sparkling wine made in Burgundy following the traditional Champagne method, yet distinctly shaped by the precepts of natural vinification.
