About Charlopin-Parizot Bourgogne Côte d'Or

His name has been linked to the Bourgogne Cote d'Or AOC for years. In fact, he was one of its promoters. Like the vines of his vineyards, the roots of the Charlopin-Parizots family go deep into the soil of this region, in central-eastern France, where today Philippe Charlopin (the fifth generation), is indispensable. His vision and philosophy, always based on respect for the grape and the terroirs, have made him one of the most authentic winemakers who manages to show the truth and the purest essence of the Côte d'Or in each of his wines. In the fusion of the most traditional methods with the most innovative techniques (he was one of the first to experiment with Hungarian oak), he finds the secret to making wines such as Charlopin-Parizot Bourgogne Côte d'Or.

Charlopin-Parizot Bourgogne Côte d'Or is a single varietal pinot noir, an indigenous variety of Burgundy, an emblem of the area that Philippe Charlopin knows and manages to perfection. This variety, which grows very well in clay-limestone soils, manages to show the minimal differences and peculiarities of each small plot in this region. In the case of Charlopin-Parizot Bourgogne Côte d'Or, this wine is produced under the umbrella of the Bourgogne Cote d'Or AOC, where 40 villages of the Côte de Beaune and Côte de Nuits are grouped together. In the past, the producers in these areas enjoyed the regional Bourgogne appellation. However, in 2017, some of them obtained this additional mention, thereby managing to differentiate themselves from other producers. Thus, the clayey and calcareous soils that extend from north to south, between Dijon and Marange, are recognised, forming a diagonal fault from northwest to southwest.

Philippe Charlopin, along with other figures such as Patrick Javillier, was one of the promoters and drivers of this appellation. Part of all this is the legacy Philippe leaves to his son, Yann Charlopin, with whom he now works hand in hand at the winery. After the manual harvest, Charlopin-Parizot Bourgogne Côte d'Or is destemmed and placed in fermentation tanks, where the must becomes wine. At the end of this process, Charlopin-Parizot Bourgogne Côte d'Or is left to macerate. This step is decisive, since otherwise it would be almost impossible to achieve the red colour that characterises Burgundy red wines. Once the tone is achieved, Charlopin-Parizot Bourgogne Côte d'Or is transferred to wooden barrels where it will rest for a few months.

After this time, ready and bottled, Charlopin-Parizot Bourgogne Côte d'Or becomes one of the most interesting red wines of Burgundy. One that everyone should drink at least once in their lifetime. Charlopin-Parizot Bourgogne Côte d'Or 2020 is a smooth, cherry red with dark ruby tones. The nose is aromatic with hints of cherry, black currant, blackberry, grenadine and peony. The palate is round and velvety, very delicate, with refined tannins. Fresh and light finish.
