About Domaine de Chevalier Blanc

You will find few wines that captivate you as much. One of the most acclaimed, one of the most coveted, and undoubtedly one that will linger in your mind. Regarded as one of the finest white wines in the world, Domaine de Chevalier Blanc is a true spectacle. The perfect blend of sauvignon blanc and semillon finds in this wine the ideal expression of the essence of A.O.C. Pessac-Leognan. Here in the south of Bordeaux, the 61 hectares that comprise this estate are pivotal. Of these, six are devoted exclusively to the cultivation of white grape varieties. It is precisely here that Domaine de Chevalier Blanc is born. "Only a great terroir can produce a great wine," they assert at the estate. And only the characteristic gravel deposits of this region can impart each wine with that distinctive character that makes them so special. Specifically, the unique feature of this type of soil lies in its low water retention capacity, which translates into an extra effort required from the plant. This results in longer roots, which develop in search of water in the deeper layers, yielding small quantities but of exceptional quality. In fact, what truly matters at Domaine de Chevalier is allowing the terroir to speak, letting it express itself freely in each vintage. Naturally, this means that in the production of Domaine de Chevalier Blanc, much more respectful processes are employed, starting right in the vineyard with the elimination of chemical products.
 
Domaine de Chevalier Blanc is harvested manually in the first fortnight of September, when the clusters exhibit perfect ripeness. A team of about 35 people will be responsible for this, working tirelessly over two or three days a week, selecting the finest clusters and placing them in small boxes (around 30 kilos each). Domaine de Chevalier Blanc will then move to the winery, where the first stop will be the press. With a very gentle and slow pressing, a quality must is obtained, ideal and perfect for subsequent fermentation in barrels. At Domaine de Chevalier Blanc, a good settling process will also be essential, ensuring that the suspended substances fall to the bottom of the tank, leaving the rest of the liquid completely clear. The final touch for Domaine de Chevalier Blanc comes from its maturation, where it will spend around 18 months resting in French oak barrels in contact with its lees.
