About Domaine de l'Enclos Chablis 1.er Cru Montmains

For years, the Bouchard family has been an integral part of Chablis. With a presence across all four appellations—including premiers and grands crus—this lineage has truly become the essence of the region. One cannot grasp the spirit of Chablis and Burgundy without acquainting oneself with their wines. And we present to you the Domaine de l'Enclos Chablis 1er Cru Montmains.
 
Exquisitely authentic and emblematic. There is nothing more quintessential than this white, cultivated in the premier cru Montmains to the north of Burgundy. This climat, spanning 188 hectares, is situated on the left bank of the Serein, atop soils composed of kimmeridgian marl and clay (of shallow depth) where the vines' maturation is assured by the sun's warmth during the early hours of the day. These specific traits are only familiar to the most knowledgeable and seasoned experts of the area. And Damien and Romain are part of this elite. This comes as no surprise, as they have grown amidst these vines, does it not? Thanks to this lived knowledge, the brothers boast profound wisdom, enabling them to cultivate their vineyards organically and biodynamically. It is important to note that this is no mean feat, given the semi-continental climate that dominates the region, with its hot summers and rainy, cold winters (sometimes even frosty).
 
For Romain and Damien, the creation of Domaine de l'Enclos Chablis 1er Cru Montmains leaves no room for chemicals. Neither before nor after. They only resort to sulfur once bottled, to ensure that Domaine de l'Enclos Chablis 1er Cru Montmains stands the test of time. As for the rest of the process, everything is done individually and with minimal intervention: it all starts with the harvest (by hand) when the grapes of Domaine de l'Enclos Chablis 1er Cru Montmains have reached optimal maturity; followed by the vibrating table (where lesser clusters are discarded); then comes pressing and fermentation (natural, using indigenous yeasts); and finally, aging on the lees.
