Hailing directly from the esteemed Grand Cru Vaudesir, this white wine is sure to impress. It would be quite surprising if this mature chardonnay, planted in 1992 by the Bouchard family, doesn't appeal to your taste. Today, it is still tenderly cultivated by Romain and Damien, brothers and the latest generation committed to preserving this legacy. From their early years, they worked on the estate until their father's retirement. Romain, who was then managing the Domaine de la Grande Chaume, contributed these hectares to the family holdings, creating a new winery with a foundation in biodynamic principles and organic, eco-friendly viticulture.
 
This is the origin story of Domaine de l’Enclos, a winery where excellence is not just an objective but a journey that must be undertaken with each of their wines. This philosophy drives the Bouchard brothers to seek out locations like Vaudésir. Nestled in a natural amphitheater, this climat boasts a unique double exposure: on one side, south-facing slopes (where grapes ripen more swiftly); on the other, a portion that faces north, with cooler grapes that tend to ripen later. Striking the perfect balance between the two is no easy feat, but both Damien and Romain have mastered the art after a lifetime among vineyards. In this case, Vaudésir has another distinctive feature: the abundance of clay that blends with the chalky limestone typical of this northern French region.
 
The harvest of Domaine de l'Enclos Chablis Grand Cru Vaudésir is meticulously handpicked and promptly transported to the underground cellar built in 2016. The clusters of Domaine de l'Enclos Chablis Grand Cru Vaudésir are meticulously sorted on a vibrating table and gently pressed to extract the must which will naturally ferment with indigenous yeasts, transforming the sugar of this juice into a truly magnificent wine.
