About Domaine de la Chappe Thérése
Climate change is profoundly reshaping the global wine map, and the appellation Tonnerre (Burgundy) has emerged as a shining example of adaptation. Once considered a lesser area of northern Burgundy due to its excessively cold climate, it now reveals a terroir with immense potential. Global warming, coupled with the vision of dedicated vintners, has allowed Tonnerre to gain recognition both locally and internationally.
Among those names stands out Vincent Thomas, the soul of Domaine de la Chappe, who took over the family estate in 2003. With 6 hectares —2.5 of them dedicated to vineyards— the property has established itself as a benchmark for natural viticulture in the region. Its vines rest on a unique terroir, enhanced by ecological practices that respect the ecosystem's balance.
Each cuvée faithfully expresses the personality of its appellation and its soils, accompanied by original labels that reinforce its identity. These are fresh, rounded, and floral wines, symbols of a more accessible, vibrant, and authentic Burgundy.
Among them, Domaine de la Chappe Thérèse stands out, a chardonnay born from family vineyards near Chablis, planted on Kimmeridgian limestone soils with 50-year-old vines. Cultivated under organic farming and hand-harvested at its optimal ripeness, this wine reflects meticulous work both in the vineyard and the winery.
The winemaking process combines direct pressing and a slow fermentation (7–10 days) in used oak barrels, followed by an ageing period of 8 to 10 months in stainless steel tanks and fifth-use barrels. The wine is bottled without fining, filtration, or added sulphites, thus preserving all its natural purity.
The result is Domaine de la Chappe Thérèse, a vibrant, mineral, and characterful chardonnay that embodies the wildest and most genuine side of Burgundy, demonstrating that in the face of change, adaptation is the path to the future.
