Fermentation is completed in 18 days with a gentle daily remontage, followed by a delicate vertical pressing. The ageing process combines oak barrels—20% new, with a gentle and slow toast—for 8 months and an additional 2 months in stainless steel tanks, ensuring a perfect balance between structure, finesse, and fruit.
