In the Jura, when we speak of Étoiles (stars in French), we encounter a case of dual stardom: on one hand, Domaine de Montbourgeau, an estate now in its fourth generation of winemakers, where each harvest is transformed into an act of precision and passion; and on the other, the village of L’Étoile itself, whose name translates to "star". This name is attributed either to the five hills surrounding the village in a star formation or, according to others, to the numerous fossils of ancient starfish still found in its soils, remnants of a distant past and the terroir that imparts character to its wines.

And naturally, from this exceptional terroir emerges Domaine de Montbourgeau 5 Etoiles. The Chardonnay and Savagnin vines thrive on grey and blue marl, in stony soils that impart minerality and depth. The harvest is entirely manual, with the grapes being gently crushed and pressed in a pneumatic press, and the alcoholic fermentation conducted in the traditional manner, with temperature control. Following an initial racking and aeration, the wines rest for 6 months in 30-hectolitre foudres before entering their true ageing phase in 230-litre barrels. Here, the barrels are not topped up, allowing a delicate film to form on the surface. This film protects the wine while allowing it to breathe very slowly, bestowing its golden hue, complex aromas, and that unique taste that renders it so special.
